Default Banana Pudding!!!

I was really craving ice cream last night but rather than succumb to those cravings i opened up the fridge to see what i could concoct to satisfy my need for a sweet treat. If this has been tried before and someone has an idea to dress it up a little, please share!!!

I just mixed together about 1/4 cup ricotta cheese (nuked it for about 20 secs to soften it and make it creamy), a little heavy cream (not sure how much, just poured til it looked right), a few packets of splenda and some banana flavoring. The result was really tasty! i even added a few drops of yellow food coloring and fooled my kids into thinking it was "real banana pudding".

OOOOOOOH!! That sounds yummy!! Banana pudding is my favorite. You can usually find 100 recipes for chocolate pudding, but this is the first banana pudding recipe I've ran across. Thanks for the suggestions, I'll have to try it out.

Oh, yummy! That does sound good. Are you from the South LeShai? I'm wondering if banana pudding is just a Southern thing...(I'm originally from Mississippi.) Don't hear too much about it up here in Washington.

Okay, I'd have to say, what in the heck is wrong with you people??? LOL.... Use Murray Sugar Free Vanilla waffers and sugar free vanilla jello instant pudding. The Vanilla Wafers have like very little net carbs, now if you add the fruit to it, it'll add some carbs.

Welcome to the forum. Uh... dude, SF instant pudding is loaded with starch. The wafers are about 12 g net carbs for 4 cookies - seeing as they probably cause more cravings and they're empty calories, that's not a good bargain in my books. Have you read any of the LC books? LC isn't about replacing your current junk food with LC junk food. Why use the instant stuff when real pudding is LC-friendly?

Nope, haven't read the low carb books. I guess I'm not a die hard low-carber. I eat low carb and sugar free because most things with sugar and carbs cause my blood sugar to bottom out. This would explain why I can go all day and not crave any foods, eat some sugar free candy and then wanna eat all night after that.

has anyone found a low carb nilla wafer? i don't do too well with complex recipes so the simpler the better if anyone has any ideas
