Default Pigs In a Blanket??

Anyone have a low-carb version of Pigs In A Blanket? I just LOVE them and I know that the little hot dogs are on plan, but what can you substitute for the biscuits?

Description:
Ingredients: 2 pounds link sausage --
cut into 8 equal pieces
8 each cabbage leaves --
large
1 cup sharp cheddar
cheese -- shredded
1 cup ragu double cheddar
sauce -- 12g carbs

How To Prepare: Spray a 9x9 casserole pan
with cooking spray. Preheat
oven to 400f.
Blanch cabbage leaves in
boiling water for 20
seconds -or until they
become
just pliable. On each leaf,
place 1 sausage link and
1/8 of the cheese(about 2
tablespoons). Roll up,
tucking in all ends, and
place, seam side down in
casserole dish. Spoon
cheese sauce over all and
bake, uncovered, for approx
30 minutes
or until sausage is heated
through.
NOTES : Counts for
sausage and ragu cheese
sauce not included in totals.
Carbs per serving - include all nutritional information if known: 11g carbs total
Effort (Easy, Average, Difficult): Easy


Got this from the LCfriends website. I also saw one with Carbo bread mix in the recipe but I don't know where to get that stuff

Every recipe I've ever seen for pigs in a blanket has been for puff pastry, and I've never heard of a low-carb version of pastry. Lard + flour has unique properties.

Now if you wanted to try it with biscuit dough, you could make a passable LC biscuit dough. See the Bread/Baked Goods forum. There are LC biscuits based on almond flour, dry grated parmesan cheese, etc.

If you go to sugar free Sheila's web site, she has a recipe page and it includes a pancake recipe that she says makes good pigs in a blanket. I haven't tried it myself, but go ahead and check it out.

I'm a bit confused. In the UK, pigs in blankets are little sausages wrapped in bacon -they're delicious and low carb.

We also have sausage rolls which is sausage meat wrapped in pastry - not low carb, but also delicious.

Here stateside, they are little hot dogs or sausages wrapped in a pastry. When my mom would make them, she would use the canned Crescent Rolls and cut that up.

I don't have any good ideas for something that would be really close.
