Default Nc Bbq

Was wondering, just how carby is North Carolina Style BBQ? It is pork, with brown vinegar (malt?) and spices, not sure what else is in it.

Reason is, I could pick some up from the store, make my own coleslaw and a low carb cornbread to replace hushpuppies for a bbq-style meal=) One can dream=)

Found my own answer. First of all, I am talking about eastern nc bbq with the vingar and spices. Seems like most nc bbq sauces have sugar in it (as well as apple cider vinegar/white vinegar blend). So, I figured out how to make the sauce, problem is I don't have a smoker to slow cook some pork! I'll have to work on that=)

Don't know how into this you are, or how much you want to spend, but you can get a small 'smoker' that works on a stove top. You just have to have REALLY good ventilation. It uses wood chips, and the food comes out just fine.

Thanks for the advice, will check into that. My stove hood is actually a real hood, vented to the outside so this might work!
