Default Perfect Pancakes for Two (Induction Friendly)

When done right, they taste as close to regular homemade pancakes as it gets!

The inspiration for this pancake was the classic oopsie roll.

INGREDIENTS:
-4oz full fat Philadelphia cream cheese (straight from fridge. Not softened!)
-3 large eggs
-1tbs Granulated Splenda
-1tbs Heavy Cream (Publix brand has <1g carb/p tbs)
-1tsp Pure Vanilla Extract
-2 drops Almond Extract
-1/8 tsp Cream of Tartar
-1/8 tsp Ground Cinnamon

PREPARING THE BATTER:
-Just like if you were making a classic oopsie roll, seperate the eggs
-Add cream of tartar to egg whites and whip til it forms hard peaks
-To the yolks add the cream cheese and mix. Then add Vanilla & Almond extracts, Splenda, and cinnamon and mix.
Yolk mixture may not be completely smooth due to cold chunks of cream cheese.
-Spoon about two large spoonfuls of the whipped egg whites into the yolk mix. Mix together until creamy.
-Pour the mixture over the remaining whipped egg whites and gently fold in.
-The batter should be fluffy just as if you were making oopsie rolls.

COOKING TIME:
-Heat a skillet on Medium heat (or slightly hotter) and dump about half a tablespoon of butter in (I use salted spreadable butter)
-Once skillet is hot, butter is melted, and skillet is coated in butter, spoon batter on as if you were forming an oopsie roll. (I use about two large spoonfuls of batter per pancake)
-Bottom of pancake should start cooking, check by lifting a corner with a spatula. If you see it turning golden brown, carefully flip over.
-Proceed to cook as if it were a regular pancake.
-Before pouring the next pancake, replenish the skillet with 1/2tbs of butter each time.
As you start using the batter you will notice a seperation in the bowl. Some liquid will remain on the bottom, but do not use this, just the fluffy part on the top of the bowl. (Which should be enough for 6 pancakes)

FINISHING OFF:
-Stack three pancakes, place a little dollop of butter ontop and drizzle with Sugar Free maple syrup. ( I use Maple Grove Farms Sugar Free low calorie maple syrup. Delicious and zero net carbs!)
-Enjoy

INFORMATION:
-Makes 6 pancakes
-1 serving = 3 pancakes (perfect breakfast for two!)
-Carbs per serving = about 3.5 net carbs
