Default 3 minute strawberry crumble

3 large strawberries
water
1 tsp butter (or coconut oil)
1 dessertspoon coconut flour (or almond flour)
1 dessertspoon sesame seeds (or similar)

Slice the strawberries and cook them briefly and gently with a little water. Pour into the dessert bowl. Using the same pot, melt the butter, then add the coconut flour and sesame seeds, or similar ingredients. Mix well (I squash it together with a spoon until it looks like breadcrumbs), pour it on top of the strawberries and serve immediately with cream.

I use the same pot for the crumble mix and the strawbs, to save on washing up.

Using ripe strawberries, this doesn't need sweetened, but if you like things very sweet, then taste the cooked strawberries and sweeten them if desired before pouring them into the dessert bowl.

The approximate counts without the cream are:

9g carbs 3g protein 8g fat 4g fiber 115 calories

The carb count would be similar if you used almond flour instead of the coconut flour.

Well that sure sounds easy enough, and GOOD! And I like that it's an individual serving. I imagine the sky's the limit on what fruit/berries one could use. Thanks for this quick dessert idea!

Thanks. It's also good with stewed rhubarb or blackcurrants - (I add a little stevia to those). The single serving is essential for me - if I made 4 portions I'd eat them all, lol.

Gee, I love rhubarb, but it was $7.00 a pound when I last saw any for sale here in Central Texas. Probably 'cause it's a cooler climate plant and they have to truck it in from up north. Tightwad that I am, I just don't spend $7.00/lb. on ANYTHING, nothing but ribeye steak that is!

Currants aren't too prevalent in the states either, sadly, at least not in Texas. I totally fell in love with black and red current desserts in the UK when we were touring around by car some years ago. But blackberries or boysenberries would do quite nicely in this. Those I can usually get.

I vary the topping a lot.. I mix 2-3 different things: sunflower seeds, pumpkin seeds, ground almonds or other nuts, coconut flour, millet, etc. Sometimes I use oats, although they're a higher carb choice - but I don't use a lot. I just whizz it in the food processor, mix it into the melted butter or oil, then put it on top of the fruit. It can be oven baked to make it more crisp, but I don't bother. I serve it with a little cream. It's worth experimenting to see what you like best. The millet stays whole and adds a real crunch.

Today I made a strawberry chocolate crumble.

I mixed a spoonful of melted coconut oil, a spoonful of coconut flour, a spoonful of cocoa powder, 2-3 spoonsfuls of almond flour and a little stevia, then I piled that on top of stewed strawberries and added a spoonful of thick (clotted) cream. Very good.

Wait. The coconut flour isn't cooked at all? Not even microwaved? It's, like, raw? (Virgin baker here, needs everything spelled out).

I don't cook it. I just leave it soft, but you could probably experiment with different mixtures and cooking it if you wanted something more crisp. I'm happy with it soft, crumbly and instant myself. The chocolate topping I made last night was pretty good with the extra cream.
