Default Beef Stroganoff

I made a really good stroganoff tonight. I kind of winged it, so measurements are guesses

2 lbs chuck steak, cut into bite size cubes
1/4 cup chopped onion
2 tbsp chopped garlic cloves
1 can beef broth (or chicken in a pinch)
2 tbsp carb quick (used it for thickening, didn't work, leave it out)
1/2 cup sour cream
1 oz cream cheese
2 egg yolks
1/4 cup LC ketchup
salt, pepper, paprika.

Dice the meat into bite sized pieces. Heat oil in a large skillet. Cook the onions and garlic until translucent. Add the meat and cook until browned. If using carb quick, sprinkle it on meat and stir until all pieces are coated. Add salt, pepper, and 1 can broth. Stir well, cover and simmer for 20-30 mins.

Uncover, stir in the cream cheese and sour cream. Add paprika. If the sauce isn't thick enough, add egg yolks by tempering first. Beat the egg yolks together, then add one spoonful of sauce at a time, beating between additions until the yolks are the same temp as the sauce. Then stir in the yolk/sauce mixture to the stroganoff. Add ketchup and continue to stir until slightly reduces and thickened.

** Edit: I also added 2 small cans of mushrooms. I added these in after the sauce had simmered about 15 mins, then recovered and simmered more

I have no clue, this was a while ago. I do know I was eating left overs for a few days after making this, so it made more then a few servings. Really you could cut the recipe into any amount of servings you choose to.
