Talking Asparagus "Sandwich" Salad

OK, I put the "sandwich" part in there because this is a recipe that I adapted from a sandwich recipe. First you have to make some aioli (fancy name for mayo with garlic)

Aioli

1/2 cup mayo
2 Tbsp olive oil
1 clove garlic
1 Tbsp lemon juice
1/2 tsp lemon zest

Mix and refrigerate. (This is a great dip for anything, it's even good on warm vegies - I always have some in my fridge)

1 cup butter lettuce
1 cup baby lettuce mix (fancy!)
8 spears of asparagus chopped into 1" pieces, steamed
1/2 cup chopped roasted red pepper (Primo has this in the pickles section)
1/4 cup shredded mozzarella cheese
2 strips of bacon (or ham or pancetta or westfalia ham) cooked and crumbled

Put the lettuce in a salad bowl and add the apsaragus, red pepper, bacon and sprinkle with mozza. This is really good if the bacon and asparagus is still warm whe you build it. Then you kind of drizzle the aioli on it and toss a little. This sound like a lot of work but it is delicious and not very much work at all and really good for company (or just for lunch - its very filling). This makes one serving with the following FitDay Counts:
