Default super bowl potluck recipe HELP needed!!!

well, we decided to do a super bowl potluck at work. Just my luck! I work in a ER and believe me my Dr's and Rn's have the worst eating habits in the world. And of course do not believe in this LC thing I am doing! So much for support! There will be carbs coming out of our ears!
And 12 long hours to eat them!!!!
I need help to at least come up with something to bring that will help me stay away from them. I figure if I bring somethimg LC and filling I can eat what I bring all day! And maybe show them that you can have LC foods that taste great and are good for you. Any ideas on a simple recipe? Thx glazzbabe

If it were me, I'd just do a big batch of chicken wings. They can be served cold. Maybe a spinach dip (there are lots of several recipes if you do a search). You could bring pork rinds and veggies for yourself.

I don't envy you! I used to work in a hospital lab, and when we were hungry, we knew the ER folks could always hook us up.

Kristine,
That is a great idea!!! chicken wings! Oh, yeah they will never know what hit them!!! I know they like wings...they always order a large batch when they order the pizza's!!! Now pork rinds they will give me trouble over but why not give it a try....they usually will eat anything...and I mean anything!!!
We always hook up our lab and xray people!!! They rock! THX
