I don't know if this is something you are looking for; some ingredients are odd for "gingerbread", and I have never tried the recipe, but, here it is:
1 cup ground almonds (start with about 2/3 cup raw almonds and grind fine in a food processor)
1/2 cup vanilla whey protein powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/2 cup Splenda sweetener
1/2 cup plain yogurt
1/4 cup oil
1 teaspoon blackstrap molasses
1 egg
2 tablespoons water
1/2 cup shredded zucchini
Heat oven to 350 degrees. In a mixing bowl, combine all of the dry ingredients and mix well. In a separate bowl, whisk together the yogurt, oil, molasses, egg and water. Pour the wet ingredients into the dry ingredients and whisk just until well combined. Add zucchini; whisk briefly to distribute evenly. Pour batter into an 8- by 8-inch baking pan sprayed with non-stick cooking spray. Bake for 30 minutes, or until a toothpick inserted in the middle comes out clean. Makes 9 servings.
Approximate values per serving: 198 calories, 15 g fat, 32 mg cholesterol, 10 g protein, 6 g carbohydrates, 0 fiber, 285 mg sodium, 68 percent calories from fat.
