Oh interesting Kristene, did not even think of it being so different from brand to brand. Wow I just looked and huge difference!
This is the one I buy/use..

Wow! Mine is Omega Nutrition's organic coconut flour. Serving size is listed as 1 Tbs (= 7 gr x 4 = 28) so I multiplied by 4 to compare to Candice's 1/4 cup (= 30 gr) serving - pretty close in weight but some values are quite different!

Hmm. Very interesting! You wouldn't think there would be that much difference in coconut flours, but--well, I'm using Aloha Nu coconut flour, and to add on to your chart there, Glenda, here's what I'm working with:

You'd think with mine having even more fiber, it'd soak up liquid like crazy, but it really didn't!

I wound up using a Jamie Oliver recipe for coconut flour cookies that calls for 3/4 cup of coconut flour, and just added cream of tartar, baking soda, and cinnamon to his recipe. It worked out quite well for me at that ratio, though since it's coconut flour, the cookies are a bit dry after chewing them for a bit.

Well, I just took a pan of Snickerdoodles out of the oven ... I only used 2 eggs this time so the dough felt closer to normal and was quite firm when I took it out of the fridge to form into balls. By the time I took the cookies out of the oven, they had still joined together, although they did retain a little more form. I guess it must be the difference between our coconut flours.

I just don't know where to go from here! I hate to throw out a whole can of coconut flour but I don't like wasting all the other ingredients either. Damn!!! I'm running out of time for Christmas cookies!

I'm so sorry Glenda. I would def try adding MORE coconut flour. But other then that with out having and experiment myself .. I dont' know. for me the rule of thumb is 20% of coconut flour the rest filled with liquid. And that is how it is in my recipes 15-20%(of the amount of Flour) of coconut flour. I just don't know where to go from there either since this coconut flour is not working the same as it should

I use Bob's Red Mill Coconut Flour.

Serving size: 2 Tbsp
Calories: 60
Fat: 15
Carbs: 10
Fiber: 6
Protien: 2

This brand worked very well for these cookies.

Somehow, I don't think my brand is absorbing the fat in the butter the way yours is. Next time I think I'll try 1/4 cup of butter and the eggs, alternately with the dry, so that I can judge by dough stiffness, when to stop adding more. The fact that my cookies are so greasy, makes me think there's something in the properties of this brand that is drastically different.

Candice, I'm not sure if I thanked you for contributing to the thread in the kitchen talk forum about this ... Requin also responded, so we have the three brands to compare, and requin's sounded very close to yours while mine was wildly different in a couple of areas - one of them being the fat content. I guess I just got unlucky in the brand I found!
