sounds wonderful. I've never used carbquick though.

No, well neither do I, but my version without it sure was good too, though as one of the other folks said, I put it in an 8x8 pan. 9x13 would have been way too big.

I've never used carbquick either. I stop the process as soon as it's cooked on the stovetop. Once it's chilled, I spoon some into a bowl, sprinkle some chopped cinnamon nuts over the top, and then pour on a little whipping cream.

That coconut version certainly sounds good though!

The results are in!!! This is a WINNER !!!!

I tried this recipe just added more of the sweetner to the crust and to the zuchini mixture. This will definitely be on my table for Thanksgiving
