Default Just Like Crispy Thin Crust Pizza

Ingredients:
1 lc tortilla
1/4 C pizza sauce
1/2 C mozzarella cheese
Toppings of choice

Preheat oven to 375.

1.Spray an lc tortilla on both sides with Pam. Put in oven for 8 minutes, turning over halfway through. Remove from oven. It will puff up a bit.

2. Spread with pizza sauce, top with cheese, and toppings. Sprinkle a little more cheese over the toppings to glue them down a bit.

3. Return pizza to over and bake until cheese melts.

By double-baking it, you get a very very crispy, crunchy crust. This is esspecially good if you like to add a lot of heavy toppings because its very study.

**I recently tried a variation of this by subbing pizza sauce for herbed ricotta cheese and used artichoke hearts, kalamata olives, and a sprinking of feta on top. It was really good.

Sounds relatively easy. I think I'll gather various ingredients, precook the tortillas and let me family pick what they want on each personal "pizza".

This does sound good; I'm adding it to my recipes for after my hida-scan this coming Thursday. After that, I hope I can begin my Atkins.

there is a pizzeria near me that does this. it comes out exactly like Domino's crunchy thin crust pizza.

That sounds good - thanks for the tip on double baking.

Does anyone know if there is a pizza sauce out there that's low-carb but without artificial sweetners??

I use the "Great Value" brand that is sold at Wal-Mart. The counts for 1/4 cup are:
Calories 30; Fat 1g; Sodium 270mg; Carbs 4g; Fiber 1g; Sugar 3g; Protein 1g

It's the best I have found so far. Check the labels in your store if you can't find this one. The different brands are very different in carb counts. It pays to read labels.

I made this over the weekend using a large square of low carb lavash... only 4 carbs in the whole thing. For sauce, I use the ragu pizza sauce, but I put it on with a basting brush.. I use very little.. just enough to get the flavor. then I put on a layer of sandwich-size pepperoni and top with cheese. Deee-Lish!

Lavash is middle eastern flatbread. It looks like a cross between a tortilla and a pita. the lowcarb kind is loaded up with flax and fiber. The company that makes it around here is Joseph's Middle Eastern.. I don't know if they distribute nationwide.

I made this using the La Tortilla Factory low-carb tortillas. It was really good. Filling too....so I had left-overs. I was very disappointed that they did not reheat well. I tried the microwave. YUCK....the crust was soggy. I tried a skillet...the crust burned before I could get the cheese melted (and I had a cover on the skillet).

I didn't want to use my big old regular oven to reheat one of these. Someone on a different thread suggested using a toaster oven. I think that might be the answer. Some people are going to try that and let us know how it works. If it works well, I'm going to get one. These are so good.....when first made.

Oh too funny! I just came to post this very recipe and found that its already here I do make mine a bit differently.

I use the restaurant style low carb tortillas (8 net carbs) and they are HUGE, pizza quick (4 net carbs for 1/4 cup. I maybe use 1-2 tbsp.), pepperoni and parmesan sprinkled over the top. I use a cast iron skillet, melt a tiny bit of butter in the bottom just to coat it, and brown the tortilla on both sides. While doing the second side, I spoon on a bit of Pizza Quick, put on pepperoni and sprinkle with cheese. By the time that is on the tortilla, its ready. I fold it into quarters and plate it. Folding it makes it thicker and easier to cut and eat.

To me, these taste just like the Chef Boyardee Pizza kits. I love those things...lol. Takes me maybe 3-5 minutes, so it is a quick lunch when I rush home to let the dog out and only have 10 minutes to grab something and eat it.

L...I think I'll try that next time. I really don't want to have to add a toaster oven to my already bulging kitchen.
