You might see on this forum where I was furious about loosing Carb Countdown in my market (Green Bay, WI) Well we recently discovered almond milk from Blue Diamond. Its actually called Almond Breeze. We buy the unsweetened Chocolate. You can also get unsweetened Vanilla. We had 2 drops of sweetfreeze and wala, awesome chocolate milk! Soooo GOOOOOD.. 2 carbs for a cup!

I love almond milk too. I heard a rumor that the company is now making a refridgerated version of the unsweetened kind! I am keeping my eyes peeled, as it is in a carton twice the size of the 4 cup carton that is shelf stable.

I can't use milk products so I use it to make a kind of pancake with eggs.

I use the fiber husks, walnut milk, and eggs cook in a pan. Use butter type and tuvia and it tasted great.

I also buy the Chocolate Almond milk....I add the Chocolate Davinci's syrup to it !

The Almond Breeze Unsweetened Vanilla Almond milk is just 1 carb (I think?) per 8 ounce glass. A good carb bargain if you ask me.

You can make quite a nice 'shake' as follows:

8 ounces Almond Breeze Unsweetened Vanilla Almond milk
1/4 cup frozen Dole brand wild blueberries
1/4 teaspoon real vanilla extract
1 drop of Sweetzfree or other sweetener of choice (I don't use any at all anymore and the shake is still good).

Whirl all up in a blender, and voila - a nice shake-like treat. The berries being frozen is important, and so is using *wild* frozen blueberries, since they seem to have a more intense flavour. The Dole brand is the lowest carb frozen wild blueberry out there - available usually at Wal-Mart Super Center.

One of these days, I'd like to try making a homemade LC'd 'Frappucino' of sorts using the unsweetened vanilla almond milk, some strong brewed coffee, some ice etc.
