Ribs and mashed cauliflower with the sauce over it all. Sooo good. I have to make that more often; DH loved it.

I live in an "all inclusive" Hacienda in Mexico. I have no choice in what's served daily at the breakfast and dinner buffet. Thankfully the emphasis is on totally fresh and healthy selections, but not necessarily LC. Breakfast was a cheese and mushroom omlette and my choice for dinner was a cheeseburger sans bun and salad made from hamburger fixings of lettuce, tomato and avocado.

Dinner last night with hubby at our favorite Chinese buffet. I had chicken, shrimp, green beans, broccoli, zucchini, plantain, chicken broth, a few chunks of canteloupe/honeydew and a vanilla dixie cup for dessert. And I'm here to tell about it.
