Peanut Coconut dressing

1 C coconut milk
4 tbsp crunchy peanut butter
5 drops sweetzfree (or use your favorite sweetener)
1 tsp fish sauce
1 tbsp Vietnamese garlic chili sauce
dash of salt seasoning
dash of garlic powder
chopped up chili (optional... I love spicy stuff)


Mix and stir the above over low heat and let it gently boil for a minute. Pour as much as you like over your favorite salad. It's about 4-5 servings for me. Can eat it warm or cold over salad. This has been a wonderful change for me because I've been trying to stay away from dairy and thus couldn't eat ranch dressing. But this one beats out ranch dressing by a mile
