Default Thermogenic Ketogenic Kookie

I ran across this recipe today and tried it out with some modifications:

Thermogenic Ketogenic Kookie

2 tbs coconut oil
2 tbs almond butter
2 tbs flax seed
1 tsp cinnamon
2 packets splenda

Mix and form into a cookie shape, place on saran wrap on top of a small plate. Put in fridge until formed.

This cookie packs it all. Coconut oil (MCT), Flax Seed (Omega-3), Fiber from Almonds, Cinnamon as a glucose disposal agent. Eat one of these and you will be humming along all day. Great as a meal replacement.

I have everything but almond butter, wonder if other nut butters would work

any idea on carbs/calories ect?

I prefer the almond butter because all the carbs are fiber, but it is more expensive. My guess is the calories are proably around 500, but its all good fats and protein.

I figured out a general carb count for this recipe:

coconut oil= 0 carbs
almond butter= 5.5 g effective carb count (ecc)
flax= 0 ecc
cinnamon= 0.56 ecc
splenda= 1 ecc

total ecc= 7.06 g carbs

And yes, Greyart, you can make almond butter. Simply put almonds (I used plain roasted) in a food processor and blend until smooth-ish. Easy!

I must say, this recipe is awesome! I multiplied all of the ingredients by 8, so I could have some left in the fridge. Delish!

I just get all my stuff at the grocery store; they have a great organic section. If you can't find it at the grocery store you're going to have to go to a specialty store like a Natural Foods Co-Op or a Whole Foods. If you still can't find it I know there are lots of different places that carry online. I like this place because they will ship for free for orders over $59.

Grey, thanks for the idea about making Almond Butter! I'm allergic to peanut products but I love almond butter. I looked online for some recipes to try. Here's what I've found:
Makes about ¾ cup.

While almond butter can be made from raw nuts, roasting the nuts just prior to making the butter considerably enhances both flavor and aroma. To roast the almonds, spread them in a thin layer on a baking sheet at 300°F for about 20 minutes. Stir a couple of times to assure even roasting.

1 cup roasted almonds
¼ teaspoon sea salt
1 tablespoon unrefined vegetable oil

Combine the almonds and salt in a food processor, blender, meat grinder or nut butter machine and process until the nuts are finely ground. Add the oil and continue processing until the almond butter reaches your desired degree of smoothness, adding more oil if necessary. For chunky butter, stir in ¼ cup chopped almonds. Store, tightly covered, in the refrigerator.

Variations: Substitute Brazil nuts, cashews, hazelnuts or macadamia nuts for the almonds. Or combine two or more of these nuts in any proportion.

I think I will be going to buy some almond butter tommorow so I can try this. If it tastes good this can be a great quick breakfast for me as I am getting tired of eggs every day, and the "low carb" bagels I sometimes get on the way to work probably arent very low carb, lol.

i made this a couple of months ago, dangerous! lol. i used peanut butter instead of almond butter, and the second time, i threw in a little lower carb oatmeal and wheat bran and divided it into fourths. it tasted just like an oatmeal cookie.

I tried this tonight...did not substitute anything, but the consistency was too liquid to "form" into a cookie shape. So I put the mixture in a small plate and it refrigerated. It did bind together well, however i could not remove it form the plate. i ate it with a spoon.

Still was pretty good to taste, a little too low on protein for my taste...but it did feel like I was eating a dessert.

try putting it on that new reynolds no stick foil. i haven't had one single thing stick to the foil yet
