Taco Salad cheese "chips"
I was making tacos for my family and thought hey, I can't eat the shells, so why not taco salad? I was really missing the thought of the 'chips" in my salad, so I found a site(don't know which one) that suggested taking a baking sheet and putting several handfuls of shredded cheese into piles. Then you bake them(I used my toaster oven) until they are toasted. They were awesome and gave me the crunch I was looking for! Just make sure you watch them closely and let them cool for minute and they'll come right off with a spatula!! Yummy! And to boot other than the little bit of 'cheese chips', 1/2 tomatoe and a few diced onions, I had a huge meal that was virtually carbless! (NC French dressing for the sauce!) Good hot or cold too!

You can also do this in the microwave quickly! Spray a plate with cooking spray and spread a handful of shredded cheese on the plate. Microwave for approx. 3 mins...and while it cools..either fold it into a "taco" or break it into chips once it cools. You may have to cook longer depending on your micro....it should be pretty stiff in the middle and not gooey. Oh and cheddar cheese works best...from what i've found.
I like to make parmesan cheese chips. I spray a non-stick pan with pam and then spread shredded (not grated) parmesan cheese evenly and not to thick in the bottom and cook on low heat until browned on bottom and then flip and do the same. These come out so crunchy. I often take garlic powder or dill weed and sprinkle on top before I flip it. I have tried in the microwave, and maybe I did something wrong, but they didn't come out as crunchy. I have tried doing this with cheddar and other softer cheeses, and in the pan you just get a gloppy nmess, but I feel like the parmesan cheese works better in the pan.

Tuna in crunchy cheese tacos!
I have to say, I make cheddar cheese tacos with a handful of cheese on a dessert plate sprayed with butter spray, 2:20 seconds, remove with spatula around edges and fold over a pan handle till cool. Fill with Tuna salad...tuna, hellmans, cauliflour, radishes, onion) WOW....I love it!
