Can someone explain this to me and help me know where to get started? I tried looking it up on the web but they make it sound so complicated. I want to know how I can start this.

Hello Burgundy,

In my (maybe too simple) perception:

The Glycemic Index (GI) is a list of foods ordered in the way they stimulate your insulin reaction on food.

So high GI gives an immediate insulin boost in your blood, which is bad.

So the sugar like foods are high on the list, and you need to avoid eating these (in large proportions).

In general avoid (or eat less) potatoes, rice, pasta and most fruit juices.

Make the bulk of your food of low GI and you will be fine.

Is the "perfect way of of eating" IMHO..lots of veggies, fruits and whole grains, nix the processed stuff. (but we knew that right?) goo luck! I think this is the BOMB!
