Obviously, I'm not Karen, but I have this from a friend of mine who can't eat eggs. I don't know how well it works, as I've never tried it:
Egg Replacer, Flaxseed
Recipe By :Judi, from "Becoming Vegetarian"
Serving Size : 1 Preparation Time :0:00
(Flax Seed Egg Replacer for baking, from the book "Becoming Vegetarian.")
1 tablespoon Flax Seed Meal -- preferably fresh
3 tablespoons water
In a small bowl or cup mix: 1 Tbsp. ground flax seeds, 3 Tbsp. water.
It is best to grind larger quantities of seeds at a time. You may store the ground seeds in the freezer.
Let the mixture sit for 2 to 3 minutes. The egg replacer is ready when thick.
Equivalent to 1 egg.
