Default holiday Tirmisu

Okay,
I am going to tackle the Tiramisu recipe I have heard so much about for a holiday potluck next week. If anybody has any pointers in advance that I should know about this recipe, please share them with me. I was watching a cooking show last year for Tiramisu (although not low carb) and the gentleman said if you cannot find Mascarpone then to use Sour Cream or a product called Mexica Cream which I have both here that I can purchase. Has anybody made this using these alternatives instead?

No! Absolutely no!

They are not thick enough to give any structure to the dessert and you will end up with a bowl of slop and be very sad about it.

If you can't find mascarpone - it is available in grocery stores or Italian delis- use a mixture of 2/3 cream cheese and 1/3 whipping cream instead. Check the label. Some brands contain sugar and other nastiness. Brands from Italy seem to be the best.

Don't deprive yourself of the mascarpone. the texture is sublime and is a great part of what makes tiramisu, tiramisu.

Be careful of using too much liquid on the cake layers or it will thin out the tiramisu filling.

Wow, Thanks Karen, I can't believe that man would have ruined my Tiramisu.. I still haven't found any, there is one italian market left to shop at and check here that is not too far to drive to. I did find some in our local grocery store, but did not want to buy it, it was "Tiramisu" flavored already with Coffee. I wanted to make the recipe exactly as is. Thanks for your suggestion. It will help if I cannot find the right stuff.

There is a recipe for homemade mascarpone (borrowed from professional chefs and/or foodwriters) in the Techniques & Discoveries subforum right here in the LowCarb Kitchen, here's a quicklink: HomeMade Mascarpone.

There is also a fine link to "Hispanic Cheeses" there somewhere.... rummage rummage... I think it includes info about Mexica Cream that may help you in your searches. Here's the quicklink to that thread (don't be put off by the name of the thread, which is Queso Blanco.

I'll be making the Tiramisu for the special day, as well! Let's all report back.
