Lightbulb Daily Menu Thread 11/13

Post your menus here! Enter either what you ate yesterday or what you plan to eat today. Please let's give newbies and oldbies some good "food for thought" and ideas.

me:

Plan: Atkins
Phase: Post Induction
Variation: 5-6 small meals throughout the day to keep insulin stable and keep metabolism up.

Meal One:
LoCarb pancake made with 3/4 scoop of Carbolite Zero Carb bake mix and 1/4 scoop Atkins pancake and waffle mix (I'm switching because Carbolite is discontinuing their low carb mix that I've been using) topped with teaspoon Jok n Al strawberry preserves (buy these items on the web wherever low carb choices are sold)

Meal Two: FlaxOMeal, cinnamon spice kind. High Fiber, low carb cereal available anywhere low carb choices are sold (netrition, low carb connessoir, carbsmart etc). with splenda and butter and dash of cream

Meal Three: Chicken strips on lettuce/tomato and oil and vinegar.

Meal Four: Porkchop (small) on bed of green beans

Meal Five: 1 slimjim and 1 hardboiled egg

I get great mileage out of curries, which I love, and I make enough that I can warm up last night's meal for lunch. This was tonight's:

Shoulder pork cubed and marinated in garlic, fresh chilies and soya sauce then fried very quickly in chili oil in the wok in batches (so it browns and doesn't stew).

After all the pork is cooked and set aside, I add say half a cup of water to the burnt pan, swish it about and then reduce it slightly. Then add a tablespoon of hot sambal paste (according to the label 1.5gs per tbsp - Brand name Glory made in Singapore) and fry this slowly until the spices start to work (If you cough after having a sniff of the mixture, you know the spices are blended and working) then I return the pork to the pan and heat it through.

Then in goes a heap of fresh baby spinach leaves, sauteed until it is just wilted.

Delish! A few slivered and roasted almonds on top really dresses it up.

Lunch was a one-egg cheese and asparagus omelette - I live for my Breville omelette maker these days!

What a great idea, Babs. It sounds as versatile as a stir-fry. Thank you!

9:00 a.m. Chocolate Keto shake (2 scoops, with cream, water and ice)

10:30 a.m. 2 hardboiled eggs (because the shake, which works fine for me as a snack, is NOT enough for breakfast )

1:00 p.m. 2 "sticky chicken" thighs

3:00 p.m. 1 small apple with 2 slices provolone

dinner ??? Probably a can of vegetable beef soup, picking out the potatoes (I'm not hungry today)

PLEASE, if you are eating post your menus here! Like essjay, I need ideas. I spent an hour today reading journals and only found 1 with a recent menu. So this could really help people. If you're eating, that is.

Default What works for me.

Hi!

I find that this helps me:

Either the night before or the a.m. of the day, I make
a LARGE salad - greens, onions, mushrooms, whatever.
(I call it my "garbage salad") I throw in cheese, leftover chicken too.

I dress it and wrap it up. Everyone knows to stay out of my salad. I use the same bowl everyday, too.

When I am hungry, or looking for "a smackral" as Winnie the Pooh calls them, I eat some of my salad. I can pace myself and that way, I get my veggies, in too.

KISS - lower salt/reasonable fats (not gobs and gobs)

8am
2 scrambled eggs, 5 small mushrooms....4

12:30pm
Ground browned turkey with 2 T mayo, 1 HB egg...(.6)

2pm snack
bit of turkey, 2 HB eggs......1

Dinner out (I needed GREENS!!!)
7pm
Big Spinach 10 Salad with unprocessed turkey & bacon (! treat for ME),
sprouts 2 , eggs 2, DAB of Ranch dressing 1..................15 carbs

Carbs 20.6

Eat a meal you can feel good about. Eat low carb.

hi guys!!

glad to see this started. i stated last week that i would be interested, and i am, i have just been gone for a few days, and today, i must say, i did not eat enough, yet. i had nuts (too many, again almonds and cashews to boot) string cheese, 2 coffees w/ cream and some roasted chicken. i need to figure out some greens. hopefully i will become more varied in my daily menus to contribute to this thread.

Today I ate:

Breakfast: 1.5 servings mushroom quiche (yummy! highly recommended! receipe found on this forum) + water
Snack: handful of pecan halves + water
Lunch: Atkins shake (I like 'em, but it's not long before I'm hungry again)
Snack: 1/2 Atkins Endulge Bar + diet, caffiene-free Coke
Snack: sugar-free Jello
Dinner: Cheeseburger with mustard, lettuce, tomato and pickles but no bun, plus extra lettuce with ranch dressing + water
Snack: more pecans, handful of strawberries, more Endulge chocolate, 1/2 diet Coke

Not the greatest menu, but it was a hectic day (overslept, late to work, worked thru lunch). I would have had different snacks and less chocolate if I wasn't out of cream cheese and cream. There's so much I like to eat, but I haven't taken the time to prepare it.

I am stressing bigtime about life issues today and just want to keep eating -- note all the snacks at end of day. Thank Heaven all days are not like this. I'll do better tomorrow.

Unhappy 11/13/01 menu

Breakfast: coffee & 2 legal tortillas with cinnimon, splenda,Butter
Had long meeting left 2 HB eggs on home counter Was real bad & had poptarts from machine

Lunch: coffee blt w/o bread cup of sf jello

Dinner: mock pumpkin danish

snack: 2 Wasa crackers w/butter cinnomon & splenda
