I took this to a potluck and it was everyone's favorite dish. Colorful and incredible flavor.

Combine and mash together:

2 avocados
1 glove garlic finely minced or pressed
salt to taste

Cut in halves lengthwise and remove seeds from:

1 pound miniature sweet peppers

Fill the pepper halves with the avocado mash. Serve.

These taste best if the only seasoning in the avocado is garlic and a little salt.

Anything with avocado is delish!!! What are the sweet peppers you refer to? I may be having a brain cramp. I'd love to try these!!

Sounds great! How do you keep the avocado from turning brown?

I think she means the little red, yellow and orange ones that are the size of jalapenos but taste like bell peppers. I always see them at Costco. They come in a plastic clamshell, like the clamshells that berries are packed in.

Allison -- exactly. They are labeled "Minaiature Sweet Peppers." Two avocados makes enough mash for 1 pound clamshell -- you need 4 or 5 for a Costco sized clamshell.

Okay, that is what I thought!! Thanks, I'll be trying these this week!!! I have avocado almost every night, so anything for a change would be good!!!

I guess the best way to keep the av from turning brown on these would be to eat them You could try putting lemon juice on them, but that to me always detracts from the flavor of the avocado. You could I guess make them individually, keep the mash in the fridge with the pit in the bowl, and scoop out as needed? The pit helps keep things from turning so fast. Also, put saran wrap over but have it touch the avocado mixture with no air...

Another trick to keep avocado from turning brown - add a little mayo to the mash. The oil in the mayo helps prevent the oxidation of the avocado. It also makes the texture creamy and delicious, especially if your avocado isn't perfectly ripe.
