Default Italian wedding soup

Traditionally made with little pasta balls, I omit them obviously for LC version.

Large can or homemade low sodium chicke stock
Place in large pot and heat to simmer

1 bag baby spinach

Meatballs are made with 1 lb. turkey burger (breast meat)
1 tsp oregano
1 tsp rosemary
2 tsp fresh garlic minced
1 whole egg
salt and pepper
(or you can use premade meatballs, just be sure there is no added bread)
Gentally combine above ingrediants and then
While stock heats, roll little meat balls, about 1/2 to 1 inch in size

Once stock is simmering drop in meatballs and cook til they rise up to the top
then add the spinach and simmer about 10 minutes, or just until the spinach has wilted.

Serve with salad, roasted veggies and the parmesan crisps, or all by itself!!! DELICIOUS!!!!

I think traditionally the meatballs are made with ground pork or beef, or is it veal? I forget. Soup seems alittle on the lean side, ya know? Maybe use the pork instead of the turkey to increase the fat?

The recipe that I have calls for 1/2 pound of ground beef and 1/2 pound of ground pork. It also calls for 1/2 cup of grated parmesan cheese to be added to the meatballs. It also calls for an egg beaten with a little water and a few tablespoons of grated parmesan to be stirred into the hot soup (like egg drop soup) right before serving.
Traditionally, Italian wedding soup is made with curly endive (it's got more bite than spinach), but spinach makes a great alternative (and the curly endive was a lot more expensive!). I made this a few weeks ago and DH loved it.

what are dreamfields and parmesean crisps??? i work at a deli and my boss makes a mean italian wedding soup, i love it. but yes it is made with pasta, maybe i could just ask her how she does it without pasta but i know she makes it with the premade mini meatballs, i dont know what is in them. so i would love to try this one.

Excellent recipe, sounds delicious. Traditionally meatballs are made with any combination of the 3: beef, veal, pork. As listed, it looks like this recipe is almost all protein with no carbs and very little fat-- I wouldn't be shy about using extra lean beef or adding the parmesan back into the meatballs. Cheers!

I made this last night. Except I bought a bag of premade italian sausage meatballs. They were only 2 carbs for six big meatballs. Very good.

try substituting thinly chopped kale for spinach.

it doesn't cook down as much and adds a great crunchy texture. just make sure you chop it small!
