Hi Debbie,
Welcome to our forum.
Every diet has the potential to cause muscle loss. But low-fat diets, and low-calorie diets are the ones notorious for muscle loss.
Low-carb diets permit higher protein and fat than any other diets, and for this reason, you only lose muscle if you follow them while restricting calories, which none of the low-carb plans recommend.
We have a few studies proving this in our Research forum, and in our Studies section on the web site.
But, since you are in class with this professor, it is a golden opportunity for you to ask him/her to site scientific references and research papers to back his claim.
I personally think he can't. Not because he's bad or anything, but most doctors and nutritionists get their information from organizations and research funded by pharmaceutical and diet supplements companies that have an interest in promoting their pills and dietary products.
