I made cheesy cauliflower pork fried rice for lunch. https://www.youtube.com/watch?v=gqOAWc5D3t8 here's the recipe for those that want to give it a shot as well. It was delicious!

Robin, I googled flackers and some came up for Walmart but there was no carb info. Can you fill in the blank?

The brand is doctor in the kitchen and they come in a few flavors. I get the rosemary variety, which has 1 net carb plus 6g fiber per serving. They are literally just flax and spices. I wouldn't like them plain, but they are great crunchy base to go with cheese or a dip.
Some flavors have a couple more carbs (like the currant one), but there are a few savory flavors. I find them at whole foods.

Today I will have 2 slices cinnamon raisin almond bread (stupidly overpriced, but it was a great for myself after a rough week), spread with laughing for cheese- 8 carbs for while thing , plus 12g fiber.
Extra cinnamon on top

Sf orange jello
Crystal light lemonade

Snack- pickled okra and the leftover egg salad

Thanks Robin. We didn't have them at our small town Walmart, and we don't have WholeFoods here, but I found several recipes to make them.

Saturday-over easy eggs

Sunday- are the xhicken, avocado, tomato, lettuce and onion from a sandwich
Side green salad with parmesan peppercorn dressing

Snack was a health warrior chocolate on Chia seeds bar

Today - 2 string cheese, pickled okra, a nut and seed lara bar in maple (8 net carbs for a large bar with crispy granola texture!)
Crystal light lemonade

Snack.....Some type of nut. I have full cashews, spicy Thai lime almonds, almond butter and peanut butter packets.....so tbd.

Just found a crispbread that isn't gluten free, but the first two ingredients are seeds. The net carbs are 4 plus 3g fiber, so I'm doing an experiment. It is trader Joe's brand.

I mashed Half an avocado on top with everything but the bagel seasoning. It's so good!!!!

Also having 2 oz Swiss cheese and a diet Dr Brown's cherry soda

Snack will be ranch roasted chickpeas- carby at 14 per quarter cup, but since lunch is 7, it fits within my macros (I try to stay 30-35 per day)

I am not fasting today so far but I am eating on plan and staying below 20 carbs.

I am on the verge of saying that spaghetti squash is the greatest vegetable God ever created...

Yesterday I made spaghetti & meatballs using the Allrecipes "Meatball Nirvana" recipe but using ground beef and pork sausage, sans breadcrumbs & subbed an egg for the milk but...

I "goofed?" and tried using the microwave to cook my squash after poking it full of holes and microwaving it in 5 minute intervals, turning in between, for 15 minutes and "over cooked" it. It came out more mushy and less stringy, but... It tasted even BETTER than before! I scraped it all out and used it anyway and mixed in about a half a cup of parmesan cheese.

Today I had the one leftover serving form yesterdays lunch. I would swear it tasted even better today than it did yesterday!

Bill- haha, love spaghetti squash. If you want it less mushy, microwave to soften for 8 minutes (with holes), then bake to finish for about 20 to 30 minutes.

Today I went out to brunch with my husband and my parents. I had a great, big lobster with a side salad.
And a glass of champagne

My bf and I decided to make Okonomiyaki (Japanese style veggie pancake) with some ingredients we bought at Trader Joe's (American grocery chain). We mixed a bag of Riced Cauliflower Stir-Fry style (slightly thawed) along with a couple of large eggs. Then put the mixture into a frying pan with some sesame oil, and flipped it over after a few minutes like a pancake. After both sides were nice and cooked, we served it on a plate and topped it with chopped bacon, green onions, and Trader Joe's Sriracha and Roasted Garlic BBQ sauce and a drizzle of mayo. It was delicious!
