Red face Can't get veg carbs under 30g!

Ack! I've modified every recipe within an inch of its life, and I cannot get the dratted carbs under 30g/day! According to FitDay, this is between 5 and 10% of my total calories, which I think is OK for Atkins induction (it says 20g max but vegetarians eat a lot more fiber, so is that all right?).

Are you subtracting the fiber? Because I know I had a heck of a time trying to HIT 20 net carbs a day.

I am subtracting fiber, though I think FitDay kind of underestimates the grams. And how can a leek have 13g carb?

Forget leeks, they are loaded with carbs. Like onions. Here are my top picks for low carb veggies -
Olives
Lettuce
Celery
Avocado
Eggplant
Spinach
Green Pepper
Cucumber
Brocolli
Zuchini
Bean Sprouts
Kale


You can even have 50 g of Raspberries or Strawberries which will have less than 3 g net carbs.

Cool! Thanks, Steve. That list pretty much looks like my "fave" list even off Atkins (except for the absence of onions and tomatoes -- d'oh!). Happy bodybuilding!

Other veggies that are a staple in my basket are:

Asparagus
cabbage (both red and green)
broccoli
mushrooms (portabella are the best!)
red bell peppers (super high in vitamins a and c)
zuchinin and yellow squash
kale
green onions
green beans
spinach/romain/arugula or mixed salad greens
fresh parsley
kalamata olives
turnips
okra
broccoli sprouts
tomatoes

Elsah, how do you manage tomatoes? 6g for a medium, according to FitDay, and 7g for a cup of cherry tomatoes, yikes! If you're making sauce, that doesn't amount to much. And if it's on a salad with other veggies, that one salad alone can take up over half the daily carb allowance.

I'm going to have fun telling people I can't have a grapefruit or nonfat cottage cheese because I'm on a diet, hehehe.

I am in maint. phase now so my carbs are pretty high. You can still have tomatoes during induction though. It's on the list of things you can have a cup of a day at the beginnning. After 2 weeks when you raise your carb levels up that gives you and extra 5 carbs to play with so adding things becomes easier. I guess I was one of the lucky ones that don't have a problem losing weight while my carbs are still pretty high. I did start out at the 20 and work my way up though.

Tomatoe sauce has to be used VERY sparingly. However, raw tomatoes is a different story. One italian tomatoe has 1.7 net g of carbs. And 100 g of a regular tomatoe has under 3 g net.

I love tofu. You can make a veggie stir fry with it.

You can make a salad, or you can eat it as a sandwich, it is great. You can marinade the tofu in low carb dressing and make some kebabs with veggies. I love tofu.
Tofu scrambles are really good also.

vegangirl, you are making me miss my tofu sooooo much! I'm not doing soy during induction, and it's making me crazy --definitely the first thing I add back in!

Have you found soy stuff to be OK for you?
