I use the 28 or 32oz bags of cauliflower. Fred Meyer (Kroger) and Safeway each carry a different size in their store brand, so I use whatever I have.

Mushrooms would be good in this too!

Wee thank you for the recipe it was fabulous!!! I used some bacon and chorizo instead of sausage cause I didn't have any. It was delish!

Just a tip...for those that don't like the cauliflower taste I found by adding a bit of Adobo all purpose seasoning..or a little garlic to the water while boiling helps mask some of the cauli flavor.
