That was interesting. I've never browned vegetables before roasting them; I'll have to try it.

I definitely agree with her on anchovies. A tiny bit disappears and makes savory dishes more delicious. (I don't think to do it often, though.)

Nice!

I can see myself picking up some anchovy paste next time I'm shopping. I was aware of its 'umami' quality. I think it was you that pointed out the umamiinfo.com website, Nancy. I remember it suddenly made sense to me why Caesar salad is so freaking good. I like their comparison of different umami ingredients in different cultures.

I love making partially-pureed soups. It's almost a must if you want a thick soup without using the usual carby thickeners.

I use fish sauce too. There's a Thai omelet I've made that is awesome, that uses fish sauce.
