Default Karen: Question about crumb mixture

Hi Karen,

I am still waiting for your cookbook .
Does it have the recipe for crumb mixture??? I hope it does .
I just made a crumb cake and it tastes quite nice but not very crumbly.

In the crumb mixture, i mixed 4 ounces almond flour, 1/3 cup splenda, and 1/4 cup cold butter (cut into small cubes). But when i cut in butter, somehow i felt that my crumbs are a bit wet like dry paste which is different than when i made it with all purpose flour during my high carb days.

Any advise on how can i improve this in the future? I love crumb cake .

Add a bit of vital wheat gluten and some whey protein. That should make it a bit crumb-ier. Sliced almonds are also a nice addition for crunch.

I keep reading about almond flour. Do you use it in place or regular flour or is it just for sweets? Never heard of this item before. Where do you purchase it?

It depends. Some people use it for breading, but it's mostly used for sweets.

It's finely ground almonds, also known as almond meal, or ground almonds. Bulk, and natural food stores carry it and it can also be purchased on line.
