Default Best Unsweetened Cocoa

I am on a mission to find the BEST unsweetened Baking Cocoa available in Canada. Karen - help? I've tried Ghiardelli, Fry's, Master Choice and a Polish Brand called Wawel. All are good, the silly thing is I think I like Fry's Best (the cheapest too!!). Is this crazy? What has been your experience? Thanks for answering our random questions.

No, not at all! You should use what you like the best.

Right now I have Droste, Bensdorp and Cadbury's in my cupboard. The Cadbury's tastes like British Cadbury chocolate bars. The other two are deep and richly flavoured, so it depends on the flavour I want.

But if you like the Fry's, carry on!

I do like the Fry's because of the colour it give my baked goods, not so much the flavour (I like a more acidic edge). I'd love to find Cadbury's or Droste...I've heard great things about the former. Where do you get it? I'm in Ontario, but I'm assuming if it is available in BC, it should be available here? The flavour of Ghiardelli is great for hot cocoa, BTW - have you tried it?
Thanks in advance.
Yours in Chocolate,
-DP

Try checking out a gourmet food store and some natural food stores have interesting cocoa. The Cadbury's I got at a South African store, here is Vancouver.

If you like an acidic edge, cocoa that has not been Dutched would be your best bet. Here's a link explaining the differences.

I have tried the Ghiradelli, but I can't really remember it. Whenever I see a new cocoa, I buy it!
