Karen, I was on the ferries Wednesday and grabbed a Sun (somehow the ferries make me think Vancouver thoughts) -- lo and behold, there was your column! Got lucky on the timing.

REALLY enjoyed your writing style (it's very much your voice) and the recipes; the surf and turf stories were great and brought out my only chuckle of the day.

It's true, only subscribers can access the archives -- if by bimonthly, do you mean your column is published twice a month (e.g., 1st and 3rd Wednesdays of every month) or literally every two weeks (e.g., 3 publications in August: 3rd, 17th & 31st) ?

Sorry to pester you on this but I'm keeping an eye out from now and will pick up a Sun when you're IN it, ta very much! but my scheduling is rather bad -- especially right now while I'm doing school/work experience/actual work so I'll need to calendar it.

Thanks again, Karen!

Yep! It's supposed to be the first and third Wednesday of every month but sometimes it gets bumped to the next Wednesday if the space is needed for something more exciting.

Default Slightly Italiano Meatloaf

I've been munching on your meatloaf and cauliflower mash all week, the sun dried tomatos really make the difference...I added a little sambal for an extra kick. (I'm a chile head!)

It's delicious, and covered with your ketchup, even better!
( I'm going to try some of that green cauliflower for the mash next time and throw in some scallions as well, green is so much more colorful than white)

Thanks!

it's in Karens cookbook, i'm not going to copy it here because it would only be appropriate for Karen to do so.

Buy the book and kick some her way!

The Romescu cauliflower rocks. Try cutting it im thick wedges and roasting it.

In your journal, I told you about purchasing your book, and thought it would be only right for you to come to the warm tropics and sign it!!

Love your book!

Where would be a good place to put a recipe for a low carb beverage on this forum?

They're usually posted in Sweet Treats.

Default Offense...ha!

Angel47, I am not easily offended. You will like the book, and it will like you.

I miss Shu Mai dumplings, thinking of taking the filling recipe, making it lo carb and making the dip for it. There is a pork meatball recipe in Karen's book that is very close to what I used to make, but I think I'll add water chestnuts. I just love that extra crunch!

I'll let you know whether what I come up with is edible or not...wonder if you could do the stuffed lotus leaf with cauliflower instead of sticky rice...or maybe just fill the whole blessed thing with meat and marinated mushrooms and bean sprouts?...eh, thinking out loud.
