We had quite a bit of left over broccoli from dinner last night and I didn't really know what to do with it and adding it to eggs didn't do anything for me. So I threw together some things and came up with this great broccoli bake. Unfortunately I don't have exact measurements as I was just throwing things together but it came out really, really good! I'll measure next time!
3 oz sausage crumbled hot or mild (bulk sausage not links)
2-3 cups cooked broccoli
4 eggs
2-3 oz cream
1 cup shredded cheese - use more or less of the cheese of your choice - I used cheddar.
Pre-heat oven to 350. Cook sausage in cast iron pan on stove top until almost done. Make sure it's crumbled pretty good and spread evenly over the bottom of the pan. Spread cooked broccoli evenly over the sausage. Beat the eggs & the cream and pour over the broccoli/sausage mixture - mine didn't cover the broccoli - it was used more as a binder or "crust". Cover with shredded cheese and bake until the cheese has completely melted and started to turn golden.
It was so good I had 2 helpings for lunch. The sausage is crumbled up nicely so you're not getting huge chunks of sausage just enough for a taste and some heat if you use the spicy sausage. And this is a great way to use up your left-overs! I hope someone can find this useful and yummy!
Really needed to "bump" this recipe. It was remarkably good! I actually added a bunch of leftover stuff from the veggie drawer. 1/2 turnip, onion, celery, mushrooms, brocolli, garlic..... I also used the hot sausage and the egg, cream, and cheese mixture. Amazingly good!

This is a great recipe, though I find that for geeks like me it's helpful to have an estimated bake time so you're not having to check the oven every 5 mins.
Bake time at 350 degrees for me was 40 mins. I then let it set out for 5 mins to cool before serving.
