Default Frozen and No bake cheesecake

Hi Karen,

Both the No bake and the Frozen Cheesecake recipes look great but, I have a question about the sweetners before I bake them. I am unable to find Sugar Twin in Charlotte. I am going to order it but in the mean time could you use Splenda for all the sweetners or would you suggest something else? Thank you. Happy Day. Judy

Yes, you use all Splenda in any of the recipes.

HI

Quick question...

When you say 2 lbs of cream cheese Is that 2 or 4 Packages of Philly?

It depends on the size of the packages. There are 16 oz. (454 gr)on a pound and I believe the packages come in 3 (90 gr) and 8 (227gr) oz. sizes.

Default twin sugar

I am interested in making your cheesecake. I live in australia and I dont know what sugar twin is. I have started using splenda for cooking since starting atkins.

Also don't seem to be able to get unsweetened chocolate for recipes - what can I use instead

To use all Splenda, Double the combined amount of the Sugar Twin and Splenda. Sugar Twin is a cyclamate sweetener available in Canada.

For the chocolate, I wouldn't know how to help you locate unsweetened chocolate in Australia but it's a very common baking ingredient found in grocery stores in the baking ingredient aisle. You could ask in the Oz forum for help.

Sadly, unsweetened chocolate is not available here.

There is a formula somewhere you can use to substitute cocoa and butter. Try searching the internet for that. Actually, you could try searching this site first. I'm sorry I don't remember where I saw it, and neither do I remember the formula, just that it exists.

Just for the record ... Sugar Twin is the Canadian brand of cyclamate sweetener. I know cyclamate is available in Oz, but not sure if it comes as a powdered tabletop sweetener?

If you are able to get it, I highly recommend Karen's original recipe instructions to mix the 2 different sweeteners together .. it really does give an improved taste over using just one sweetener alone.

Default Karen - doubling sugar content

Thanks for the reply regarding substituting splenda for twin sugar.

I am a bit confused about the amount as you said to double the combined amount

does this mean I use 1 cup of splenda to cover for splenda and twin sugar combined and an extra 4 tbls to cover for brown sugar twin.

Also
Somebody mentioned that they could not make the cheesecake until after induction - why is this?
