Parmigiano Reggiano is the best cheese ever.
Sometimes I will slice off thin curls of it and just a few pieces, less than an ounce is enough because the flavor is so rich...

weekend was on road for a race:

saturday (night before race)

3 GIANT wings
side salad with blue cheese
clams in broth

sunday (after race party!)

chicken/bacon/swiss sandwich (ditched bread of course)
side salad with blue cheese
a ton (maybe a cup?) of the grilled onions from boyfriend's fajitas (he hates onions)
a sugar free margarita, ok 2

Last night I made mini pizzas topped with Rao's cheesy spaghetti sauce, spinach, mushrooms, cheddar, jalapeno, and pepperoni. YUM.

This recipe (from pinterest) made 10 for me, I only ate 3
1-1/2 c. Shredded mozzarella cheese
3/4 c. Almond flour
1 egg
2 Tbsp. Butter melted

saturday night we stopped at Outback traveling home from a race-

shared side salad with boyfriend- blue cheese dressing (their side salad was REALLY small, next time i would get my own!)

tuna tatake appetizer shared with table so i took 2 nice piences)- it was very good!

french onion soup- no crouton- excellent
crab and avocado stack without chips- was also very good

for a restaurant chain near many highways, this is our favorite when traveling and just trying to get a quick, decent meal.


tonight:
baked dilly lemon flounder
"ugly beans" with lemon and goat cheese
side salads with champagne vinaigrette

On Sunday I made a variation of this Better Than Quiche, Ricotta Pie recipe and had some for dinner last night. It re-heated very well. I made the recipe exactly as described, but poured it over a layer of precooked ground beef, tomato sauce, and Italian seasoning. I threw in a little extra shredded mozzarella over the beef mixture and then sprinkled a little shredded cheddar and extra parmesan cheese on top. It reminded me of lasagna and was very good. Next time I may add a layer of thin sliced zucchini for that noodle-like texture.

I'll be having a big salad with my own homegrown lettuce. The weather is hot now, and it'll bolt any time now if I don't just yank it all.

I'll be adding (storebought) tomato, bell pepper, leftover rotisserie chicken and 3-cheese ranch dressing.

Robin, I never thought of using zoodles for pasta salad. I can't wait for the plethora of zucchini from my garden, Garden Gawds be willing.

Half a roast chicken, baked mushrooms stuffed with pate, and a salad of lamb's quarters dressed with olive oil and salt. Got a bag of lamb's quarters greens at the farmer's market, they were delicious, sort of a nutty flavor and not bitter, my new favorite!

Yellow summer squash so far cooked with Kerry gold....
Will either cook a couple of NY strip steaks with some mushrooms or the rotisserie chicken and a salad.
