Default Stuffed Italian Chicken

Ok, I experimented last night, and it turned out rather good. I took boneless/skinless chicken breasts and pounded them out flat (I put mine in a zip lock one at a time and beat them severely.... good thing the chicken can't call CODA. This is a great frustration reliever too... LOL) Then I laid them out one at a time and sprinkled some garlic and italian seasonings on them, then some tomato sauce (lowest carb count I could find) and some mozerella cheese. Then I put about 5 or 6 pieces of pepperoni down and some mushroom slices (I suppose you could varry this to whatever you like) and starting at one end roll them tightly sort of pushing the stuffing items inside. I laid them in a glass baking dish (seam down) and sprinkled some more seasoning on them and drizzled a little olive oil across them, baked them at 375 for maybe 25 minutes then added some grated parmesean and some more tomato sauce and put them back in for about another 10-15 minutes (sorry I rarely cook by time, LOL). They were really good, the only thing I would do different is to use a little more cheese, maybe put some mozerella on top and let it melt some...

My daughter calls it "Pizza Chicken", quite the little 3 year old she is...

I'm having the left over one for lunch right now and thinking I should make some more in a big batch and freeze them, would be an excellent quick lunch to have on hand.

I see all the peekers, did I get any takers? LOL...

I'm gonna make some more next week and experiment with them some more... thinking maybe some riccotta cheese (god help me, I've never tried cooking with that... LOL) inside???

Ahhhh... I'm going to plan a menu for the week and go shopping tomorrow. I want to be extra good cause I am going to have to do some cheating while I am out of town... LOL

Does the ricotta cheese melt down? I hate the clumpy texture of ricotta . Sad, I know! LOL

I don't know... I haven't experiemented with it yet... LOL... I just know it is used in lasagna, and I was thinking italian... LOL... anyone else???

What else could you put in it? I mean, I think pepperoni is high in carbs is it not? I love mushrooms... Could you use bell peppers you think? Suggestions appreciated... I am going to try this one!!!! Thanks for telling us about it!

Pepperoni is not really high in carbs as long as you don't over doit just like with the tomato sauce. It is so good. My husband even loves it. I can not tell you how much we loved it, we used bell peppers in it also. So, try what u want .

Hey did u get the receipe, just print it out. No, thats all we used. I only had about 3 tbsp of tomato sauce on mine cause of the carbs in it. Did you list me as a referal. ??? I printed out a lot of receipes the other night, Robby is even eating some of them with me. LaceyO

I buy Hormel pepperoni at Costco, and according to the package 1 serving is 14 pieces and contains 0 carbs. I count it as 1 carb, since I am sure there is some carb content in it.

The recipe sounds great, will give it a shot
