No oats for me, but I make a faux malto-meal most mornings that gives me fiber, MCT, and magnesium, and lots of anti-oxidants. I've posted the recipe in the recipe section.

I react badly to all grains now (v. intense BG spikes), so I'm probably on the far end of the distribution curve for this issue.

I LC for a long time, I used to get a horrible reaction to anything higher carb than what is on induction, even fruit used to cause my stomach upset, it took over 2 months to re-train my tummy to get used to higher carbs, its just when we LC for so long, our bodies stop producing specific enzymes to digest higher carbs, I made the mistake many did - never moving up the carb ladder, now I am able to eat fruit and starches with no reaction at all... our bodies are amazing and can cope with change.

I've been eating oatmeal for the last 3 weeks or so. I'm maintaining at about 2-3 pounds below target, and so far haven't seen a problem. I use quick oats (1/3 cup before cooking), and add a Tbsp of butter and honey (OH YES - REAL HONEY). I've also increased my cardio, due to high cholesterol, so maybe this is why I haven't seen an increase in weight eating it this way. I can say that it really has helped with any sweet cravings I get, and honey seems healthier than sugar, even if the carbs are high!
