Sherry's Cheesecake Custard

Ingrediants:
1 egg
1 oz soft 1/3 less fat Philly cream cheese (less carbs)
1/4 cup water
1/4 cup heavy cream
1/4 t vanilla
1/4 t cinnamon
1/4 t maple flavoring
sweetzfree to taste (5-10 drops) I used 5

Mix well and add to small ramikan
Bake at 350 in a water bath until soft set in the middle
Cover (making sure plastic wrap lays on surface) and chill at least 3 hours.
Eat as is or drizzle w/ low carb syrup (plain for me)


Stats:
Cals:383
Carbs:2 or 2%
Protein:10 or 18%
Fat:37g or 87%
VERDICT is AWESOME! Creamy, Smooth, Filling.......


Sherry's Lemon Shake Custard

1 can Atkins Ready To Drink vanilla shake
2 eggs
1t lemon extract

Preheat oven to 350 with baking dish full of water (check to make sure that the water will not overflow when you add in your custard cups)

While preheating mix shake, eggs, and flavorings. I poured into 2 smaller size coffee cups. Let any foam created during the mixing settle and then place in the water bath. Bake until just set. Cool (w/ plastic wrap laying on the surface to prevent a skim) for a few hours and enjoy.


Stats (for 1):
Cals:163
Fat:26% or 9.5g
Carbs:.5% or .5g net as the shake has fiber
Protein: 19.5% or 16g

The Atkins one is not as rich and creamy as the other one BUT has alot less carbs and calories....

The first one is so filling and keeps me satisfied most of the day.

Sounds awesome!

I was just trying to figure out a way to make a LC coconut creme pie type desert.....

I was looking at modifying a standard recipe, but your cheesecake custard looks easier to modify....maybe like this?

Ingrediants:
1 egg
1 oz soft 1/3 less fat Philly cream cheese (less carbs)
1/4 cup water
1/4 cup heavy cream
1/4 cup heavy coconut milk
1/4 t cinnamon
1/4 t coconut extract
1/2 t DaVinci SF Vanilla Syrup
1/2 cup unsweetened, shredded coconut

Mix well and add to small ramikan
Bake at 350 in a water bath until soft set in the middle. Sprinkle lightly with cinnamon and cover (making sure plastic wrap lays on surface). Chill at least 3 hours.

I have not made it yet, and have guessed at the amounts. Whatta ya think?

Another custard variation:

Chocolate Coconut Cream Custard

1/4 cup heavy cream
1/4 cup water
.25 oz unsweetened chocolate
1 egg (beat)
1T coconut cream concentrate
5 drops sweetzfree.

Melt chocolate w/ the cream and water and add other ingredients slowly. Bake in a water bath until just set and cool.

Another Variation......

Coconut Lime Custard

1/4 cup heavy cream
1/4 cup water
zest of 1 lime
Juice of 1/2 lime
1 egg (beat)
1T coconut cream concentrate
5 drops sweetzfree.

Combine well. Bake in a water bath until just set and cool. Best well chilled IMHO

1T heavy cream
5 drops sweetzfree
1t vanilla

Blend well and bake like the others...

1 oz soft soft cream cheese
1 oz sour cream
1/4cup water
1 egg
5 drops sweetzfree
1t SF vanilla

Following mixing and cooking instructions above. Eat well chilled and like a super rich creamy cheesecake. Good w/ extracts to change flavor (lime, lemon, raspberry, chocolate, coconut.....) Possibilities are endless and this is good cause it makes 1 ONLY so portion control is a snap!

These custards for me are quick easy breakfasts I take to work. Cook the night before and you are set.

Lately my custards have been the following:

2 eggs
1 oz very soft cream cheese
1/4 cup warm cream
1/4 cup warm water
1t vanilla
1t maple extract
5 drops sweetzfree

Mix well and bake covered in a water bath at 350 for 30 minutes. Chill

Tastes like french toast custard...

Banana Nut Custard

1 oz melted cream cheese
1/4 warmed cream
1/4 warm water
2 eggs
1 t vanilla
1 t banana
10 pecan halves chopped fine (1/2 oz)
5 drops sweetzfree

Beat well and bake at 350 covered in a ramekin and water bath for 35 minutes. Chill and enjoy.
It is high calorie but with the running my weight is dropping again so I am adding in more calories (fat)
