Someone had chocolate cravings, so I thought up this recipe as a quick fix. It might be a good starting point for a better recipe.. please note any modifications in the thread below.
1 tsp butter, melted
1 tsp cocoa powder
2 tblsp ground sunflower seeds, almonds or similar
tiny amount of sweetener like stevia, to taste
Mix well together, then add about 1/2 tsp of cream cheese (or peanut butter) - just enough to make the mixture stick together.
Roll the mixture into small balls, then roll them in cocoa powder. Chill in the fridge before serving.
Those sound very similar. I think any type of nut or seed would work for this. I used the sunflower seeds because I'm trying clear my cupboards, not because they added anything in particular. I'd try almonds plus added almond essence, or maybe hazelnuts for this as a first choice. I have some pumpkin seeds to use up next, so I was interested that yours contain those.
I'd love to add cherries to the recipe, but they're not really suitable for low-carbing.
I've given up caffeine now, but found that the modest amount of cocoa in these didn't affect me badly or trigger cravings. I'm not that bothered about making more soon, but sometime I might try making one without chocolate - a tangy one with lemon and yoghurt/cream cheese and maybe some coconut.
I tried the lemon idea. It needs a bit of tweaking, but I liked it:
2 tablespoons of sunflower/pumpkin seeds - ground to powder
1 tsp of lemon rind
1 tsp softened butter
1 tsp cream cheese
a touch of stevia
enough lemon juice to get it soft and moldable.
It would be good rolled into balls, then rolled in coconut, but I added extra lemon juice and ate it from a dessert bowl.
Mmmm. those sound good, Kirsteen! Ya know, I'll bet dried apricots, seeds, nuts and coconut would make a good one, too. Or dried cranberries, orange zest and juice, seeds and nuts and coconut, or dried cherries, nuts and coconut. You've given me all sorts of ideas to run away with.
Those sound good, though some would be too high in sugars for me, I think.
Dried rasps and dark chocolate are very good together.. but I don't tend to have dried rasps sitting around my house. I have fresh rasps in the garden - maybe I'll try some of those.
