Default Cheese Salad

Had this for lunch today.

Ingredients:

2 oz hard sharp cheddar
1/4 tsp minced onion
1/2 tsp minced green pepper
1 tsp chopped celery
pinch cayenne, garlic power and onion powder
salt & pepper to taste
3 T mayonnaise
dash of cream to moisten

Grate cheese and place in bowl.

Add the rest of ingredients and stir lightly until mixture is just combined.

Serve on Bibb lettuce leaves with thinly sliced English cucumbers.

This is almost the same recipe I use to make pimento cheese except I don't put in celery or cream and I put in diced pimento peppers (in a small jar). Sometimes I use 2 different cheese. I have kept in refrig for a week or so and eaten on celery or spread on a ham slice and sometimes just with a spoon. Anne

Made it again and this time threw in a dash of brown mustard--tasty!

Yes, I did base this on my mother's pimento cheese recipe!
