Ummm... not great really. It's a lot of work to put together an omelette when you can't have cheese or dairy. I really would have needed some onions and other stuff to make it tastier. I was in a big hurry to get out the door, and I wanted to try to lemon juice in the eggs. I couldn't really taste the lemon either.
