Default What to go with/?

I bought this http://tastybite.com/products/kashmir-spinach/#facts

The recommendation on the side is to serve with flatbread or jasmine rice. Both of which are out on LC. I was thinking cauliflower mash (I only have frozen cauliflower not fresh to rice) but was wondering if anyone else had ideas.

i like palak paneer with pounded chicken- it really stretches those carbs. it is also great over eggs- i like them sunny side up, but i think any style would do.

love your riced cauliflower idea, but that would be too much veg for me at once- makes me feel bloated.

I would do a mixture of chicken and plain ol' steamed cauli. I'm too lazy to clean up the mess of riced cauli. :P

I'm going to have to try that low carb flat bread, If it turns out decent, that could have a variety of uses. The chicken idea sounds good too, but not sure how the chicken would help absorb extra liquid.

I tried with eggs, and it turned out pretty good. The only issue was heart burn, but I think that had to do with the spices.

You can make cauli-rice with frozen cauli.
