Default Entertaining For Vegetarian Company-Ideas?

Hello All!
One of the professors from the college I attended is going to be coming by my house next month for either tea and a snack, or dinner. I'm not familiar with vegetarian cooking, and I'm afraid I won't cook enough things she can eat. I don't want her to leave starving! I know she is perfectly fine with eating with those who are eating meat, so that's not an issue. Do any of you suggest a meal that all of us could eat together, but that the meat is seperate? She doesn't eat meat (red or white), dairy/eggs, sugar, or white breads/pastas. (whole grain only) I'd appreciate your help! I hope it doesn't come across as her being a burden- quite the contrary, I'm really looking forward to her visit!

Well, grilled squash or portebella mushrooms are something that everyone can enjoy and you can use them for both a meal or cut them up for snacks. I usually marinate them in Italian dressing or whatever you want and then grill them.

Also a quick stir fry with various veggies and some firm tofu cut up is great.

for dinner, steamed spaghetti squash tossed with sliced olives, some of those grilled portobello mushrooms, roasted red peppers, pine nuts, garlic, olive oil?

for a snack/tea...how about phyllo dough triangles stuffed with chopped spinach, tofu, and the nuts of your choice?

What about some nice guacamole? She's going need some fat if she is not consuming animal products.

vegetarian sushi rolls.. delicious! If she doesn't eat white rice use brown or a mix of brown and wild, you can be creative. You can make fishy rolls for the non-veggies if you want.

AMAZING soup....

Fry chopped carrots and some fresh sliced ginger very gently in some butter. When it's softened, throw into the blender or food processor (or you can just use a hand blender if you have one) and add back into the pot with some TOM YUM paste. You can find this at your local asian food shop, it's a spicy thai soup paste, it balances the sweetness of the carrots and adds flavour. Then pour in a bunch of coconut milk and warm. It tastes goumet. Everyone will like this, not just a vegetarian.

Baba ganoush
Fry bake or BBQ sliced eggplant with olive oil until blackened
Put into the food processor with plenty of fresh garlic cloves, lemon juice, olive oil and if you want some tahini (sesame seed butter) Process until smooth and serve with warm pitas, crispy crackers, or veggies to dip in it.
