Default I'm confused about wheat gluten?

Hello I am newly diagnosed type 2 diabetes, and have been reading Dr Bernstein's book. Since I am a strict vegetarian, I rely on Soy products for my protein. With the exception of eating tofu, most vegetarian soy products (ie: tofu dogs, boca burges, soysage, etc...) have wheat gluten in them. Since Dr. Bernstein says to not eat any grains, I was wondering (and hoping) that wheat gluten is ok to eat. Does anyone know?

Gluten can cause problems for many people. The proteins in the gluten are hard to digest properly. The gluten will not cause a blood sugar problem so it is safe to eat from that point of view. Lots of people do consume gluten with no problems so the choice is up to you.

You might want to read "Dangerous Grains". There's a few researchers coming to the conclusion that probably 30% of the population shouldn't be eating wheat.

If you are not sensitive to wheat it is probably not harmful. If you eat alot of it though you may become allergic to it, if it were me I'd eat it sparingly. Judy

Leezurd, the best bet unless you actually have documented allergies/sensitivities is to choose from all of the proteins that you are willing to eat with moderation in mind. Don't rely on any one thing to be your sole protein source, or provide more than 25% of your protein. That said, if you're NOT sensitive to wheat, and you don't have any digestive issues after eating wheat gluten/seitan, then enjoy!
