Default gingerbread recipe help

hi karen, i am hoping you have a LC recipe for gingerbread, i cant find a recipe for it and i have looked on several recipe sites
do you have one????

I don't know if this is something you are looking for; some ingredients are odd for "gingerbread", and I have never tried the recipe, but, here it is:

1 cup ground almonds (start with about 2/3 cup raw almonds and grind fine in a food processor)
1/2 cup vanilla whey protein powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/2 cup Splenda sweetener
1/2 cup plain yogurt
1/4 cup oil
1 teaspoon blackstrap molasses
1 egg
2 tablespoons water
1/2 cup shredded zucchini

Heat oven to 350 degrees. In a mixing bowl, combine all of the dry ingredients and mix well. In a separate bowl, whisk together the yogurt, oil, molasses, egg and water. Pour the wet ingredients into the dry ingredients and whisk just until well combined. Add zucchini; whisk briefly to distribute evenly. Pour batter into an 8- by 8-inch baking pan sprayed with non-stick cooking spray. Bake for 30 minutes, or until a toothpick inserted in the middle comes out clean. Makes 9 servings.

Approximate values per serving: 198 calories, 15 g fat, 32 mg cholesterol, 10 g protein, 6 g carbohydrates, 0 fiber, 285 mg sodium, 68 percent calories from fat.

Here is a cookie recipe from LowCarbLuxury, again, I have never tried this recipe:

* 1 3/4 cups almond flour
* 1/4 cup oat flour
* 1/4 lb (1 stick) softened butter
* 1/2 cup granular splenda
* 1 Tablespoon Brown Sugar Twin
* 1 Tablespoon Molasses
* 2 teaspoons water
* 1 teaspoon vanilla extract
* 1 1/2 teaspoon ground ginger
* 1 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1/4 teaspoon ground cloves
* 1/2 teaspoon salt

Gingerbread Cookies Preheat oven to 300F. Cream butter with Splenda and Brown Sugar Twin in a large bowl. Add water and spices and mix well. Gradually add almond flour and mix to a stiff dough. Form into small balls and place on greased cookie sheet at least 1" apart. Bake at 300�F for 20 minutes. After five minutes in oven, press cookies down with a fork in a criss-cross manner. Continue baking, being careful not to burn and adjusting time for your oven.

Makes about 2 dozen cookies - 1.4 effective grams of carbohydrate per cookie.

Do you mean the cake or cookies?

One of the members made the recipe above and brought it to a potluck. The cookies were really good.

i was really looking for the gingerbread cake recipe(you know like the one mom used to make when you were growing up,lol) BUT i am going to try the cookie recipe it sounds good too

Go to Atkins.com and click on recipes, then type gingerbread in the search box. A good recipe will come up. It has 9 grams carbs per serving.
