Default Karen's New York Cheesecake again!

Yes, I'm back again with another version!! I've had so much success with this cheesecake recipe for potlucks, people are disappointed when it DOESN'T make an appearance. Well, I decided to make a blueberry coulis. I sliced the cheesecake up and drizzled some coulis over the slices and dropped whole blueberries on the serving plate for presentation. SCARFED UP does not even begin to describe it. It was a feeding frenzy and I got none of it!! So I suppose when I get back from a class trip to Toronto next weekend, I will make another cheesecake and try a strawberry coulis this time. My mom thinks I'm a little crazy for making two cheesecakes every month. I tell her that it's fun and I like it. People thank me for "going out of my way" to make a sugar-free dessert - please, it's nothing really. If they only knew how easy it is...and it is easy. Oh - I did chunk up the cheesecake into bits, covered them in Fern's Peanut Butter Chocolate recipe and popped them in the freezer for a treat. My husband, who does not eat any cheesecake nor anything without sugar, got the surprise of his life when I made him an apple pie sweetened with XyloSweet! He LOVED it and asked me to make it again. I told him I would make fried apples if he would clean up his workshop in the basement. DEAL!!!! I'm making a sugar-free peppermint cheesecake for my husband's school's potluck in December - at least I think I will. I've got time to think. That is such a versatile recipe and I'm having fun with it.
