After almost 8 years of near-zero carb, it most certainly is sustainable.
However, in practice it’s impossible to be completely at ZERO. There’s always going to be some trace amount of carbs in certain foods such as eggs and cheese. I’ve not experienced any ill health effects with eating at or near zero carb. Also, haven’t eaten a veggie since the…er…Bear thread. Not sure if anyone still remembers that one.
Even my Doctor who had been steadfastly against my dietary choice for “zero” carb has admitted that perhaps he had been wrong about eliminating carbs, at least when it relates to me. He did however observe that for some who had a certain mutated gene, the high saturated fat would cause a litany of adverse health effects.
In practice, I’ve found ZERO carb impossible to adhere to all the time. There’re just too many social lunches, dinners and events where one simply has no choice but to have a drink, slice of dessert and have some carbs.
All things being equal, for most of us, ZERO (at or near zero) is absolutely sustainable.
