This classic benefits from long cooking to tenderize the meat.
1 tablespoon olive oil
1/2 pound top round, cut in thin strips
1 teaspoon minced garlic
1/4 cup chopped onions
1/2 cup sliced mushrooms
2 tablespoons red wine
1/4 cup water or beef stock
2 tablespoons sour cream
In a medium saucepan, saute the onion in the oil until they are translucent. Add the garlic and saute for a minute or two. Add the meat and cook until it is brown.
Add the mushrooms and saute until they are starting to soften.
Add the wine and stock or water.
Bring to a boil, reduce heat, cover, and simmer for 45 minutes. Remove the cover and turn up the heat. Cook until the liquick is reduced to next to nothing. Remove from the heat.
Just before serving, add the sour cream and blend well.
