Chicken & Spinach Platter
I got this recipe off the insert from a Wampler Chicken package. It's very good and low in carbs.
I looked up the carb counts on Fitday.com for each item.
1 package Pick of the Chix (or an assortment of breast, thighs,
legs whatever you prefer but you need about 8 good size
pieces) - 0 carbs
1/4 C Olive Oil - 0 carbs
1 lb. fresh spinach - less than 3 carbs
1 Garlic clove - less than 1 carb
1 Medium onion - 11 carbs
1 lb. fresh mushrooms - 13 carbs
1 Medium green pepper - 6 carbs
Salt and pepper to taste
2 cups shredded Monterey Jack cheese - 1.5 carbs
Preheat oven to broil. Preheat a large skillet with oil to low heat. Place chicken in skillet and cook for about 20 minutes. Add vegetables and saute for 15 minutes. Place chicken and vegetables in a broiler pan. Cover with cheese and broil until cheese is melted.
Serves 4 ~ approximately 8 - 9 carbs per serving.
They suggested serving this over egg noodles, but it tastes very good all alone and obviously a lot less carbs!
