It's definitely a great way to use up those zukes! They're like accordions. You put one in your car and leave the doors unlocked, come back and find two!

I need to ask if you try to remove some of water from the shredded cauliflower or zukes by draining or pressing first before you continue with the recipe?

Yes. You definitely want to drain and press post cooking the cauliflower for the first time, if you decide to precook the cauli prior to adding it to the eggs and cheese--moreso if you use zukes.

thanks, I saw in the first recipe the cauliflower was cooked but I see that the zucchini recipes call for "raw, shredded" zukes. Do you then steam the shredded zucchini or leave it raw?

The zukes you just use raw, which makes it super easy! But due to the liquid you definitely want to drain and squeeze out the liquid.
