I love roasting it in the oven, especially when I am making chicken legs. Then all the juices drip into the pan and the cauliflower soaks it up. The tops also get kinda crunchy.
I have a recipe that I've used for years. It fits perfectly with low carbing and is convenient and delicious:
24 Hour Cauliflower Salad
1/2 head lettuce (I use the equivalent in red leaf or romaine) in small pieces
1/2 large head cauliflower - cut into flowerets
1 cup mayonnaise
1 small onion
1/2 jar bacon bits - just use real bacon
1/4 cup parmesan cheese
Use large bowl. Assemble incredients in bowl in order given. DO NOT STIR OR MIX! Cover and refrigerate until ready to serve - 12 to 24 hours.
Toss and Serve. Enjoy!
I've modified this to my taste, my mom used to make it with potatoes.
1 head cauliflower
2 cups sharp cheddar grated
1 small onion chopped fine
1 container sour cream (500 ml)
2 cups low carb cream of mushroom soup (lots of recipes online)
Boil the hell out of the cauliflower. Chop it into little bits. It should just fall apart.
Mix all ingredients together and bake at 350 for an hour, or until bubbling and brown.
ive tried it a million ways and cant stand it. today was the last straw, im never eating it again. i cut it up with some broccoli and chicken and cooked it in tomato sauce thinking the sauce would mask the taste, but it didn't- it was still gross. the broccoli & chicken was good tho
